What is Onglet steak?

Originally hailing from France, onglet steak – more commonly known as beef skirt or hanger steak – is making a strong comeback in British kitchens due to its strong beefy flavour and genuine ease of cooking. Onglet goes really well with flavoured sauces and is perfect for flash frying.

Our dry-aged, grass fed onglet steaks come from small, family farms in Dorset and Wiltshire. Because they are 100% grass-fed, our hanger steaks are high in Omega 3 and full of vitamins.

We dry age our onglet steaks for 28 days to allow the water content in the meat to reduce and the fibres to tenderise for a better flavour.

Beef Onglet / Skirt / Hanger Steak

Our dry-aged, grass fed beef onglet steaks (or beef skirt in a British butcher) are sourced from native breed cattle reared on small, family-run Dorset and Wiltshire farms that have been purely grass-fed on lush, natural pastures. Grass-fed beef has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E and contains higher vitamin and mineral levels. Eating meat from animals that themselves have only eaten a natural diet of grass, wildflowers, clovers and legumes, rich in essential vitamins and minerals and untainted by chemicals and pesticides, makes a whole lot of sense. It’s a healthy choice to make.

Our Red Rubys, Aberdeen Angus and Dexter breeds have been allowed to reach maturity at 30 to 36 months naturally, in order to produce beef that has outstanding depth of taste and texture with wonderful marbling. To lock in the great flavours you expect from high-end, grass-fed beef, our meat is dry-aged for at least 28 days and prepared using the finest traditions of British craft butchery.

How to enjoy an onglet steak at home

Onglet steak is a versatile option that you can pair with a variety of delicious options, depending on your own tastes. One popular approach is to serve your onglet with red wine shallots for a rich and indulgent flavour.

If you’re not quite in the mood for such a hearty dinnertime recipe, then there are also simpler onglet recipes out there. For example, you can just as easily serve up your steak with herbs like marjoram, watercress or basil. Once you’ve fried up your steak and herbs, simply serve it with the potato dish or vegetables of your choice.

Onglet steaks are a quick meat to cook and can be prepared in as little as 2 minutes on each side. By searing the outside on a high heat you can create just the right crispy texture, whilst also locking in the full flavour and juices in the centre.

Choose from our wide range of grass fed meat, cheese, chef prepared meals, or pick one of our set boxes.

Select your delivery day. We deliver across the UK 5 days each week and you do not need to be in to receive your order.

So that your order arrives in tip-top condition, we prepare each order by hand so that it’s fresh, vacuum pack each item and then pack it in a temperature controlled fully recyclable chilled liner to ensure that the contents stay chilled for over 48 hours.
